Cookies, Manu-Style (Gluten-free Sugar-free Vegan)

I wanted to make cookies that I deemed healthy and yummy, and so I made up this:

  • 3 tablespoons of flax seeds (whole)
  • 1 cup of almonds (whole)
  • 3 servings of AlphaFoods vegan vanilla protein powder (replace with more flax seeds, a date and some vanilla)
  • 6-8 Medjoul dates
  • half an apple
  • half a cup of quinoa (dry)

Cook the quinoa, let cool a little. Grind seeds and nuts. Blend apple with dates.

Mix it all together. Then form cookies, bake until crunchy on the outside. (Or just eat the mix without baking 😀 )

I had them in the oven at 180 degrees Celsius for 20 min and burned them, so do less than that 😉 Since none of the ingredients need cooking, it’s just about the texture. I’m thinking I might try lower temperatures altogether (100°C), so more dehydrating than baking …
